Peanut Butter Granola

Have you ever done something and then wonder, why didn’t I do that years ago? Well that is exactly how I felt after making this homemade granola recipe. I have to confess I always thought that making your own granola was a bit of a waste of time, you have so many known brands to choose from out there that I didn't see the point on spending time making it from scratch. But there comes a time in everyone's life when you HAVE to take care of what you put in your mouth because: it does end up in your thighs! This recipe is a healthier choice from the pre-made ones and you can adapt it to your taste by adding some dried fruit, seeds or chocolate chips and it is really easy to make!





Ingredients:

  • 2 1/2 cup rolled oats 
  • 2 tablespoons butter
  • 1/4 cup sugar (I used brown sugar)
  • 1/4 cup honey
  • 1/4 cup mini chocolate chips (optional) 
  • 1/2 cup peanut butter
  • pinch of  salt to taste 
  • 1/2 teaspoon vanilla

Directions:

  1. Preheat oven to 170°C. Line a baking sheet with foil or parchment paper. 
  2. Soften peanut butter and butter in a microwave safe bowl or in a pan, add honey, sugar and salt and mix together. 
  3. Mix all of the other ingredients (except chocolate) together in a medium sized bowl and add softened butter mix.
  4. Stir until everything is well combined.
  5. Pour the granola into the baking sheet flattening out and bake for 10 minutes, then remove from oven and stir a bit to break granola apart. 
  6. Return to the oven for another 10-15 minutes, or until granola is crisp. 
  7. Let cool completely, add chocolate chips and store in an air-tight container for up to 7 days
