Easy Corn-Dogs

Who doesn't love a good old corn-dog? It's like going back in time to our childhood! Here in Holland this yummy treat is not well known and you can not easily find them at local stores, so I had to find a way to make them for my little one, you see: I want him to try all the great treats I loved as kid and corn-dogs are high on my list!
Original corn-dogs require cornmeal, cornstarch and buttermilk but I have found out that Pancake Mix works just as good and it is easier to get, I'm sure pretty much everyone has a box laying around in their pantries!! You can use any type of sausages, for kids I suggest using cocktail ones and make mini corn-dogs.






Ingredients:
  • 2 cups pancake mix
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt (or  more to taste)
  • 1 pack sausages
  • Large Wooden sticks
  • Vegetable oil to fry
  • Flour for dusting

Directions

  1. Mix together the pancake mix, milk, eggs and salt to a fluffy batter.
  2. Insert the wooden pick in one end of the frankfurters, leaving 1/3 of the stick exposed.
  3. Dust the sausages in the flour, this way the mixture will stick better.
  4. Heat the oil in a deep pan.
  5. Dip each sausage into the batter making sure it is all covered and then drop it into the oil. Make sure to turn until golden.
  6. Transfer the corn-dogs into a paper towel to remove excess oil.
  7. Serve with ketchup and mustard.


Tip: Make sure the oil is really hot before frying the corn-dogs or they'll become very oily, also, use a deep pan (or wok) or even better: a Deep Fryer, this makes the job a lot easier! (I just made a batch and the first 2 came out extremely oily)
You can also make a nice relish for the grown ups instead of Ketchup.

Sweet and Spicy Relish:

  • 3/4 cup ketchup
  • 1/4 cup pickled jalapeno peppers, diced
  • 1/4 cup pickled red bell peppers, diced
  • Mix together and serve.
