This is a very simple salad, but the grilled peaches and bacon add that little extra. I use canned peaches when I cannot find fresh ones and to be honest it tastes a bit better, it might have something to do with the sweet sirup :)
If you want to save time you can use pre-made Honey-Mustard dressing but making it from scratch makes it more fresh!
- Ingredients:
- 1/2 cup pecans (you could also use walnuts)
- 4 ripe peaches, pitted and quartered
- 2 tablespoons vegetable oil
- 150g smoked bacon, roughly chopped
- 8 cups baby spinach
- 200g Soft Goat Cheese crumbled
For the Dressing:
- 1/3 cup mayonaise
- 2 1/2 tablespoons Dijon mustard
- 1/4 cup honey
- Juice of one lemon
Directions:
- Preheat the oven to 180°C . Place the pecans on a baking sheet and toast until golden, allow them to cool down and roughly chop them.
- Preheat a grill to medium-high heath. Lightly brush the peaches with oil and grill until nicely marked on both sides.
- Bake the bacon on medium heath until crisp, transfer to a paper-lined plate.
- Combine the spinach, grilled peaches, pecans and bacon in a large bowl.
- Mix the dressing ingredients in a bowl and whisk together.
- Add the dressing to the salad and serve.
Tip: You can add some grilled chicken to this salad and make it a full meal.
