I found this recipe not too long ago and I HAD to try it!! It was easy, nice looking and healthy.........and I have to say it lived to its expectations: it is delicious!!!
I have to admit I changed it a little, instead of using basil I used jalapeno pepper on it (there's that mexican palate asking for some hotness!!!) and it worked out great!
It can be a great side dish or a wonderful topping for a nice fresh baked baguette, or even a nice cold pasta salsa!
Ingredients:
- 1 container cherry tomatoes, cut in half
- 1 ball fresh mozzarella cheese cubed
- 1 avocado, peeled and diced
- 2 tablespoons fresh parsley
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 tablespoon of jalapeno peppers chopped
- salt and pepper to taste
Directions:
- In a large bowl mix tomatoes, mozzarella cheese, parsley and peppers. Set aside
- Mix the oil, lemon juice, salt and pepper and pour over tomato mixture. Cover and refrigerate for one hour.
- Just before serving add the diced avocado, mix together and voila!!
