Mozzarella, Tomato and Avocado Salad

I found this recipe not too long ago and I HAD to try it!! It was easy, nice looking and healthy.........and I have to say it lived to its expectations: it is delicious!!!
I have to admit I changed it a little, instead of using basil I used jalapeno pepper on it (there's that mexican palate asking for some hotness!!!) and it worked out great!
It can be a great side dish or a wonderful topping for a nice fresh baked baguette, or even a nice cold pasta salsa!





Ingredients:

  • 1 container cherry tomatoes, cut in half
  • 1 ball fresh mozzarella cheese cubed
  • 1 avocado, peeled and diced
  • 2 tablespoons fresh parsley
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon of jalapeno peppers chopped
  • salt and pepper to taste

Directions:

  1. In a large bowl mix tomatoes, mozzarella cheese, parsley and peppers. Set aside
  2. Mix the oil, lemon juice, salt and pepper and pour over tomato mixture. Cover and refrigerate for one hour.
  3. Just before serving add the diced avocado, mix together and voila!!
